Tomatokeftedes – Fried Tomato Balls
Tomatokeftedes, or fried tomato balls, are a delightful summer dish hailing from Santorini island. These savory fritters are a combination of tomatoes with a blend of herbs and aromatics that create a crispy, flavorful appetizer or side dish. Ingredients:
For the fried tomato balls
- 2 big tomatoes
- 1 onion finely chopped
- 2 eggs
- a small bunch of Parsley finely chopped
- a small bunch of Dill finely chopped
- Oregano
- 1 tablespoon of tomato paste
- 3 tablespoon of all-purpose flour
- Olive oil
For the serving
- a piece of feta cheese
- a little bit of parsley
- a little bit of Parsley
Method:
- Prepare the Tomatoes:
- Remove the seeds from the tomatoes.
- Cut the remaining tomato flesh into small cubes.
- Place the tomato cubes in a bowl.
- Mix Ingredients:
- Add salt and pepper to the tomato cubes.
- Add the finely chopped red onion, fresh parsley, fresh dill, and dried oregano.
- Crack in the eggs.
- Add the tablespoon of tomato paste and the three tablespoons of flour.
- Mix everything together until well combined.
- Fry the Tomato Balls:
- Heat olive oil in a pan over medium heat.
- Using a spoon, carefully place portions of the mixture into the hot oil.
- Fry the tomato balls well on both sides until they are golden brown.
- Remove the fried tomato balls and let them drain on paper towels for 2 minutes.
- Serve:
- Place the fried tomato balls on a serving dish.
- Garnish with crumbled feta cheese, extra parsley, and cherry tomatoes.
